A SIMPLE APPLE CINNAMON CAKE
MAKES ONE 9 INCH CAKE
Greytown’s Molewood orchard at 17 Mole street, are currently open weekends for pick your own apples right through to May. I have to say what a true pleasure it was to walk through such an amazing romantic orchard. A true simple pleasure and with apple price at $2pkg it’s an experience not to be missed.
This simple apple cake with a crunchy cinnamon crust has minimal ingredients and takes only minutes to prepare….out of the oven, it won’t last the day!
INGREDIENTS
APPLE CAKE BATTER
3 apples, peeled, cored and chopped
2 eggs
1 cup granulated sugar
1 cup crème fraîche
1/2 cup canola oil
1 tsp vanilla paste
2 cups plain flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
CINNAMON SUGAR TOPPING
1/2 cup brown sugar
1 tsp cinnamon
1 Tbsp melted butter
METHOD
Preheat oven to 180c bake. Grease and line a 9 inch springform pan and set aside.
In a stand mixer, beat eggs and sugar on high speed for 3 minutes or until pale and thick. Mix in the vanilla, crème fraîche and oil. Add the dry ingredients and mix for 30 seconds or until just combined.
Spread half of the mixture into the prepared pan and top with half of the apples. Spread remaining batter over the top and top with the reserved apples.
Make the topping, by mixing all ingredients with a fork, then sprinkle the topping over the top and bake for 65 to 75 mins until cooked.
NOTES
Crème fraîche can be replaced with sour cream
Any vegetable oil can be used instead of canola
I used Galaxy apples, but any crisp flavoursome apple would work
