Rotisserie Christmas Ham
A Christmas without panforte, probably unthinkable. Incredibly easy to make, perfect at the end of a meal with a sweet wine or coffee and makes a fanastic handmade Christmas gift.
Ingredients
1 x 2kg Woody’s boneless mini ham
FOR THE SPICE RUB
1 tbsp ground coriander
1 tbsp smoked paprika
1 tsp ground cumin
1/2 tsp cinnamon
1/4 tsp ground cloves
1 tsp cayenne
1 tsp toasted fennel seeds, ground
salt
1 tsp ground black pepper
4 cloves minced garlic
2 tbsp olive oil
FOR THE GLAZE
1/2 cup liquid honey
1/2 cup brown sugar
Juice of 1 lemon
2 Tbsp Dijon mustard
1 tsp cinnamon
1 tsp ground cloves
Method
Prepare the ham by removing the skin and score a diamond pattern on the fat.
Make the spice rub by mixing all the ingredients together.
Then rub the mix all over the ham and put in the fridge covered over night.
The next day, take the ham out of the refrigerator and let it warm up to room temperature. Thread the ham on your rotisserie spit and place on the grill over medium to low, indirect heat with a pan under the ham to catch any juices and prevent flare-ups. Close the grill lid.
Cook for about 15 minutes per 500g or about 1 hour total for a 2kg boneless ham. But when the internal temperature reaches 150 F/65 C, probably 10 to 15 minutes before the cooking time is up, begin brushing the glaze over the surface of the ham.
While the ham is heating, it’s time to make the glaze. Make the glaze by combining in a small bowl, the honey, brown sugar, lemon juice, cinnamon, and cloves. When the ham has about 15 minutes heating brush the glaze mixture over all surfaces of the ham. You want to get an even coating.
Close the grill lid and continue roasting until the glaze has started to turn golden and dark.
Turn off the heat, but leave the rotisserie running for 10 minutes to allow the sugar to set. Carefully remove the ham from the grill and rotisserie. Let it rest for 10 minutes covered loosely with foil and then carve and serve.
NOTES + VARIATIONS
If your BBQ as a wood smoker, this is a nice addition to use while cooking your ham.
This can be done in the oven on 160c bake. Line a roasting tray with baking paper with a small amount of water to prevent scorching and roast until golden. Then 10 to 15 minutes before the cooking time is up, begin brushing the glaze over the surface of the ham
For a larger ham cooking time is about 15mins per 500g.
